Food Philosophy

Over the past 4 years of his 12 years of culinary experience CJK has grown to love the Anti-Inflammatory Diet.  It simply makes sense.  Cooking with nutrient dense fruits and vegetables, grains, meats, and seafood is what inspires CJK to create dishes that help his clients get the most out of each meals.  All while sticking to a gluten and dairy free lifestyle.

For each dish we create we focus on nutrient dense foods, high protein and organic vegetable content, healthy gluten-free and organic grains, organic oils, and organic meats.  While we cannot guarantee every ingredient will be organic in each meal (throughout the seasons some organic produce can be hard to find) we do strive to purchase organic ingredients when possible.  CJK avoids foods that cause inflammation in the body for example peanuts, gluten, dairy products, and other common allergens.  At the same time CJK strives to include known anti-inflammatory ingredients like turmeric, flax seed, chia seed, hemp seed, quinoa, cruciferous vegetables (bok choy, cabbage, broccoli, kale), healthy oils, and cooks them in a way to insure that little nutrients are lost.  Much of what CJK has learned about the anti-inflammatory diet has come from books like Anti-Cancer, and vegan nutrition expert Brendan Brazier.

Making  convenient and delicious meals out of healthy and  nutrient-dense ingredients for his clients is the best part of CJK’s job.
